Kiwi Popsicles
Ingredients
1 3/4 cup(s) water
1 cup(s) sugar
4 kiwis
1/2 cup(s) (about 4 limes) fresh lime juice
Directions
- Make the syrup: Combine 1 cup of water with the sugar in a small saucepan and bring just to a boil. Set aside to cool.
- Make the ice pops: Using a paring knife, cut kiwis into quarters, peel, and remove the white core and seeds from each piece. Place the seeded kiwi pieces in the bowl of a food processor fitted with a metal blade and purée to a liquid -- about 1 minute. Combine the puréed kiwi, 3/4 cup syrup, lime juice, and remaining 3/4 cup water in a large bowl. Pour the mixture into molds and freeze until solid -- about 6 hours.

Featured Athlete
Jessie Lee

Jessie has just recently participated in her 1st race this April, the Merrell Mud Run at Castaic Lake, and is looking forward to participating in a few Spectrum Sports events: volunteering for the Disney Half Marathon and running in the Catalina Eco Marathon 5K taking place Nov. 13th. Having played tennis in high school, on her off-season she tried cross country and tried setting goals like simply running a long distance without stopping. But she didn't quite feel the excitement of racing until she experienced her first race. She describes what she likes about a race as "seeing all the action going around you- the other racers, the spectators, but seeing everything from a different world like you weren't really there but were watching a video from someone else's perspective." After Jessie and her boyfriend completed the Merrell Mud Run Run, they signed up for the Catalina Eco Marathon 5K and are currently looking forward to making a weekend trip out of it. She says, " I'm looking forward to doing another race with my boyfriend as well as hopefully sticking to the training plan we have so we'll actually be fit to run the race... Catalina Island is also a very beautiful place- I am excited for the race course and seeing the landscape as a soothing factor to pushing myself forward." Jessie is originally from Taipei, Taiwan but currently resides in Southern California. " Running is a perseverance sport. You have to learn how to accept the circumstances and go with it- by sticking it out, you find the pot of gold at the end of the rainbow, and that is being able to finish the run." - Jessie Lee
